THE CELLAR

Cellar which was founded in 1834 by great-grandfather Giacomo, is situated on one of most beautiful hills in Neive land, the hill of Canova.

Being surrounded by its own vineyards, this farm has been recently brought back to its old splendours through a careful restoration work; it is made up of a wine-making room, a bottling room, an old cellar of 1800 years used for red vintage wines ageing and a tasting room.

NEBBIOLO. THIS WINE IS OBTAINED FROM THE "SORI' CIABOT " VINEYARD THAT PRODUCES “BARBARESCO NEBBIOLO”. AN ACCURATE AND SO MUCH GOOD GRAPES CHOICE IS CARRIED OUT WITH A LONGER RIPENING PERIOD. WINE IS MADE FOLLOWING THE SAME PROCEDURE AND AGED IN SMALL “ALLIER” OAK BARRELS (BARRIQUES).

“ARNEIS FROM LANGHE” IS OBTAINED THROUGH “ARNEIS” VINE CLONIC SELECTION WHICH IS CARRIED OUT IN NEIVE BY TURIN UNIVERSITY. IT IS CULTIVATED ON WHITE, CLAYEY AND VERY WELL EXPOSED SOIL. GRAPES ARE PICKED UP AT THE END OF SEPTEMBER AND THE FERMENTATION TAKES PLACE AT A CONTROLLED TEMPERATURE OF 16-18 DEGREES: FIRST, ONE MAKES THE MUST REMAIN ON THE PEEL DURING TWO DAYS AT LEAST AND THEN PROTRACTS FERMENTATION VERY SLOWLY.

STRAW-COLOURED YELLOW WITH GREENISH REFLECTIONS

ETHEREAL, DELICATE. IT REMINDS THE RIPE PEACH.

THE “MOSCATO FROM ASTI” IS OBTAINED FROM A SELECTIVE VINTAGE, PICKING UP IN MANY STEPS THE RIPEST CLUSTERS AND MACERATING THEM ON THE PEELS. THE “MOSCATO OF ASTI”, “STARDERI HILL” IS 50 YEARS OLD WHILE THE “MOSCATO OF ASTI” “CANOVA HILL” IS A 30 YEARS OLD VINEYARD..

COLOUR

STRAW-COLOURED GOLDEN YELLOW MORE OR LESS INTENSE WITH VERY THIN SMALL BUBBLES, BEING QUITE NUMEROUS AND PERSISTENT.

AROMA

CHARAKTERISTIC AND FRAGRANT AROMA OF MOSCATO GRAPES (MUSKY). THE SYRUP COATED WITH BURNT SUGAR OF PEACHES MIXES WITH APRICOTS JAM.

TASTE
